Thai Cucumber Salad



2 Carrots, peeled & julienne
1 English or Greenhouse cucumber, peeled & julienne
1/2 Daikon radish, peeled & julienne
Sesame seeds, toasted

Dressing:
3-4 sprigs Cilantro, chopped fine
3-4 spearmint leaves, chopped fine
juice of 1/2 lime and 1 tsp. lime zest grated.
1/2 cup seasoned rice wine vinegar
pinch of sugar

Whisk dressing ingredients and pour over vegetables tossing together. Chill 15-30 min. Sprinkle lightly with toasted sesame seeds
