Thai Basil Vinaigrette or Marinade
1/4 cup fresh lime juice
2 tbsp. Thai Basil, chopped
2 tbsp. Fish sauce
1 tsp. sugar
salt to taste
ground red pepper to taste
6 tbsp. vegetable or peanut oil
Whisk together in a small bowl all ingredients except oil. (Or process in a blender or food processor) Add oil in a slow steady stream whisking constantly until smooth. Use immediately or refrigerate.
